What is special about a birthday cake? You have great taste, no doubt, but the appeal really makes a cake visual dazzle. In Portland, Oregon, Papa Haydn is known for unique birthday cakes that look as fabulous as its taste, so we ask co-owner Evelyn Franz to share some of her secrets for cake decorating success.
Evelyn helped her sister and brother-in-law Heidi and Jeff Van Dyke, who Papa Haydn founded in the late 1970s, create their legendary dessert menu. Since then, Papa Haydn in Portland has become a dessert destination, always winning awards and accolades of food lovers and restaurant critics alike.
With a masters degree in sculpture and a lifelong love of baking, the pastry Evelyn guides personal visual appeal combined with exceptional taste and texture. "I think it is so important to pay attention to the eyes as it is flavor," she says. "The shape and color can make a big difference in terms of what we really like your taste. I do not think it's a successful dessert unless it looks as good as you know."
If you want to try your hand at creating stunning cakes for birthdays, anniversaries and weddings in your life, consider these helpful hints from Evelyn.
Tie a Yellow Ribbon: An easy and elegant way to decorate birthday cakes is by tying a colorful ribbon at the bottom of the cake. "You can use gauze or simply a French film really doll up any cake, "says Evelyn. Just remember to remove the tape before serving.
More quilts terrible: Check out stores Cake Decorating Ideas, says Evelyn, who likes to decorate birthday cakes with dragees or candy pearls. Silk or flowers edible pads also make elegant cake, convert a regular layer cake to a birthday cake to remember.
Fabulously ice cream: With a little practice, you can turn an intricate design icing on birthday cake. Alternating vertical and horizontal ribbons of ice cream, for example, we will create a delicate pattern fabric that dazzles the eyes. Even the simplest designs can be achieved by creating swirls or peaks with a spatula or the back of a spoon.
Wrap up: For the pastry chef more advanced, involving a cake in a thin layer of another cake can add an elaborate touch that dazzles even after birthday cake or anniversary cake is cut. Papa Haydn features delicacies such as white chocolate mint truffle cake, wrapped in a chocolate sponge cake with drawings, Hazelnut Mousse Cake, wrapped in a striped almond sponge cake, peanut butter from Georgia and Mousse Cake, wrapped in a polka dot cake and topped with ground peanuts. Take some practice, but the effect is well worth the effort.
The art of chocolate: Evelyn and her crew are well trained in the art of decorating with chocolate, too. Simply spread a thin layer of melted chocolate on a sheet of cold marble slab or baking, then carefully make curls or ribbons with a metal spatula to decorate your special cakes. For birthday cakes, you can cut rectangular flag of black chocolate, write a "Happy Birthday" message with white chocolate or frosting, then place the banner upright on the cake for an edible birthday greeting. This also takes practice, but once you've mastered the technique, you'll be a star cake decorating.
Designing from scratch: Another way to create birthday cakes dazzling layer cakes and fillings for a variety of flavors and textures. "Let's make a cake that has meringue in it as well as the dressing and maybe a chocolate cake without flour, "says Evelyn," to give a nice texture and crunch. "Using cakes and fillings of different colors adds to the visual appeal and as taste.
