
Is it necessary to use marzipan fondant when Decorating a Cake?
I have three books on Cake Decorating which instruct American to put on the cake with marzipan and then fondant. I have taken classes in cake before and just put the fondant on it. I know fruit cake requires marzipan. But I can make my cakes and just put some butter cream and fondant in the top right? I can skip the step of marzipan in books? Why do this? THANKS!

Course no! In addition, the marzipan is incredible expensive. Personally, I've never used the marzipan fondant. I really do not know why his book says to do this way. Marzipan can be used as a substitute for sugar paste, as long as you do not want your perfectly white cake. I've always used butter cream with fondant. And this was how I was taught in culinary school.
