How to make sure the top tier of your wedding cake survives in the freezer for 1 year

A lot of newlyweds stick to the age-old custom of saving the top tier of their wedding cake for the big first wedding anniversary celebration.

If you adhere to this custom…here are some essential suggestions when freezing wedding cakes:

  • Have your wedding cake baker/designer supply a “take home container” (a box) for the top tier of your wedding cake.
  • Assign another person from your wedding party, family or friend, to take the top tier of the wedding cake home with them. Instruct this person to place the box in their freezer as is.
  • After the wedding cake has been in the freezer for 4-6 hours (or overnight) take the cake out of the box and cover it using any brand of plastic shrink-wrap.
  • Immediately place the wrapped cake in a freezer bag. Most grocery stores carry 1 or 2 gallon freezer bags. The freezer bag will provide you with the very best chance of preventing freezer burn.
  • Visit your department or discount store and buy a plastic container (Tupperware type) big enough to fit the cake and freezer bag. Always make sure the lid will fit tightly.
  • Place the container in a chest type freezer or your standard upright refrigerator freezer. The strategy is to place the container toward the bottom of a chest freezer or the back of a standard upright refrigerator freezer. Doing so helps minimize the harmful effects to your wedding cake that comes from the refrigerator’s defrost cycles.
  • Whatever you do, don’t take the wedding cake out of the freezer for a full year. If you let it thaw even a little, you will definitely run the calculated risk of your wedding cake deteriorating.

Important guidelines for thawing wedding cakes

  • Two days prior to eating your cake, reverse the complete covering process until you pull the shrink-wrap off the frozen cake.
  • Take two or three sheets of paper towels and put them on the inside bottom of the plastic container. After that place the cake back into the covered container and return it to the refrigerator.
  • Right after two days, take the wedding cake from the refrigerator, leaving it in the container, and place it on the counter for one to two hours. Wedding cakes typically taste far better at room temperature…so eat and enjoy!

>>>> If you would like to plan something extra special for your first year anniversary celebration, have your photographer or friend take a picture of the top tier of your wedding cake.

Then, prior to your first anniversary, take the picture to your wedding cake baker and have him or her decorate an exact duplicate.
